  • Mmmmm Pork Chops… bet some “Cheesy Corn” would have gone great with that! 🙂

    Greg & Jennifer, it was great to chat w/ you during Monday’s show. I was the fellow from Massachusetts who’s favortite Thanksgiving side dish was “Cheesy Corn”… as promised, here is the recipe…

    2 Tbsp Butter
    4 Tsp Flour
    1/8 Tsp Garlic Powder
    3/4 Cup Milk
    6 oz American Cheese
    6-8 oz Cream Cheese (cubed)
    3 x 10 oz Pkgs Frozen Corn
    3 oz Diced, Cooked Ham

    In large pan melt butter. Stir in flour & garlic powder. Add milk. Cook over medium heat, stirring until thick and bubbly. Stir in cheeses over low heat and melt. Stir in corn and ham. Bake in covered 2 qt dish @ 350 degrees for 45 minutes or until hot.

    Enjoy & remember, this week the Calories don’t count!

  • Good to see Father Roderick state side again. Better than that, it is good to see they got the rubber band fixed on the plane to safely arrive! And since you are going to have Father on, I am going to have to sign up for XM online today!!!
