Here’s how I started my birthday morning.

After getting all the prep done for today’s broadcast, I sat in our new recliner, reading Magnificat, in a silent house, clean living room, with a sleeping dog.

Quite nice.

After the program we dove into the carrot cake, not even bothering to wait for the kids to get home from school.

If you like carrot cake, this is the greatest carrot cake recipe ever.

My mom made it for countless birthdays, and now my wife makes it for Father’s Day and my birthday.

I love this cake.

This is a perfect cake.

Here’s the recipe:

INGREDIENTS

4 Egg
2 Cups Flour
2 Cups Sugar
2 TSP Soda
1 TSP Salt
1/4 TSP Cinnamon
1 1/4 Cup Salad Oil
2 (7oz) jars of Carrot Baby Food (yes, baby food)

Place all ingredients in a bowl, beat until well combined.

Pour into 2 greased round pans.

Bake at 350 degrees for 45 minutes.

Cool, remove from pan.

FROSTING

One 3-ounce package cream cheese (softened
1/4 Cup margarine
2 Cups powdered sugar
1/2 Cup chopped nuts
2 TSP vanilla extract

Place all ingredients in a bowl, mix well, and spread on cake.

If you know of a better tasting Carrot Cake, I’d like to know about it.

This cake is just beyond words.

  • Aaaaah! That’s almost the precise recipe for the Argovian Carrot Cake, a speciality from around where I grew up. What a small world. Glad you had such a wonderful birthday!

  • I LOVE MOM!! Mine has a recipe for chocolate trifle that involves chocolate pudding, cool whip, crushed heath bar, and a couple of splashes of Kaluha on each layer of cake!! (in Homer-like voice) Mmmmmmmm Choooocolate!!! (drool. . .).

  • Happy Birthday! I am going to try this cake with my wife over Thanksgiving Break. Listened to last podcast and WOW are you guys busy. It was fun listening to you guys because my life feels that hectic right now with big changes on the horizon as well (no, not another little one, but possibly a move etc.). It’s good to hear you guys are adjusting and keeping your sanity, well Jennifer is…just kidding Greg. I found a new beer “Old Speckled Hen” it’s and English Beer and I love it. It replaces the beer formally known as Greg’s Favorite for me.

    Hope all is well and I’ll listen to the next podcast! Tell those guys at SIRUS and XM to hurry up and combine so I can hear you guys all day! Kidding but I am waiting.
